Ingredients:

  • 1 cup Self Raising flour

  • 1 cup cornmeal (also called polenta or maize)

  • 1 large can creamed, sweet corn

  • 1 cup soy, almond or rice milk

  • 1/4 cup light vegetable oil

  • 1 tablespoon parsley finely chopped

Method:

  1. Liberally oil and flour a loaf tin;

  2. Heat oven to moderate setting;

  3. Combine flour, cornmeal, sugar, salt and pepper;
