Carrot salad

Carrot health benefits: Purple and red carrots contain more antioxidants than the orange varieties, but all carrots are loaded with valuable nutrients of antioxidant value which search our bodies for free radicals and stop them from attaching healthy cells by removing them from the bloodstream. The cardiovascular system also benefits from the abundance of antioxidants in carrots which have the effect of sweeping the arteries clean and sending oxygen-rich blood to the heart which lessens the risk of a heart attack caused by hypertension. Studies show that much eyesight and age-related macular degeneration risks are often reduced after a six-year period of regular carrot inclusion in the diet.

Vegan Carrot Salad

Ingredients:

  • 500g carrots, coarsely grated

  • 200g apples, peeled and coarsely grated

  • 60g almonds, toasted and chopped

  • 2 tablespoons fruity olive oil

  • 2 tablespoons lemon juice

  • 2 tablespoons orange juice

  • 1 teaspoon ground cumin

  • 1 teaspoon ground cinnamon

  • 1 teaspoon castor sugar

  • pepper to taste

Method:

  1. Toss all ingredients together;

  2. Don't add salt;

  3. Refrigerate for two hours.

Before serving top with crunchy Tofu Topping.

Tofu Salad Topping-Ingredients:

  • 2 cups freshly made stale bread crumbs

  • 1 cup firm tofu, crumbled in small bits

  • 1/2 cup olive oil

  • 4 drops sesame oil (beware, very potent flavour)

  • 1 tablespoon fresh basil, finely chopped

Method: Heat oils, add all ingredients except the basil. When the tofu is crisp and golden add the basil. Stir well, put aside then use to decorate the top of the Carrot Salad.
