Vegan Spinach Pie

Spinach Pie can be assembled the night before cooking. If reheating left-over, do not microwave as the pastry will soften. Best served hot but also yummy cold.

Assemble Spinach Pie

  1. Remove stalks from spinach, break the leaves into small bits;

  2. Heat 3 tablespoons of olive oil over low heat, add the onion and cook till transparent, add spinach, garlic and basil. Lid and stir frequently until the spinach is almost limp. Remove the lid and stir till the liquid has evaporated, add walnuts and set aside;

  3. Drain the tofu, puree with remaining ingredients except the filo and oil. Stir into cook spinach mix. Adjust the seasoning to your taste;

  4. Brush a loaf tin with oil;

  5. Lay 2 sheets of filo in the baking dish. If it overlaps the sides let it be. Lightly brush the filo with some oil then lay another 2 sheets on top.

  6. Gently spread half the spinach mixture over the filo sheets then lay another 4 sheets down, oiling between the first 2. Spread the second half of the spinach mixture on top,

  7. Fold the overlapping pastry on the top, oiling between, then lay the last filo sheets on top, oiling in between as you did before. Tuck in the edges with a blunt knife.

  8. Using a sharp knife slash the pastry across the top in serve-size pieces. Brush with oil.Bake uncovered in a moderate oven for 35-40 minutes until golden brown and crispy.

Note: At no time should you press the pastry down, it needs air to give a crunch when eaten. Enjoy.
