RAISIN SAUCE

Ingredients:

  • 1 cup water

  • ½ cup white sugar

  • 1 cup seedless raisins

  • 3 tablespoons lemon juice

  • ½ cup grape or orange juice

Method: Soak raisins in water for 3 hours, boil them till soft, add sugar, then simmer for fifteen minutes. Remove from the heat, add juices. Purée.

SATAY (PEANUT) SAUCE

Ingredients:

  • ½ cup water

  • salt to taste

  • juice 2 lemons

  • 2 tablespoons oil

  • 1 cup coconut milk

  • 2 crushed garlic cloves

  • 2 finely chopped onions

  • 1 tablespoon soy sauce

  • 2 tablespoons chilli sauce

  • 2 teaspoons ground ginger

  • 1 cup crunchy peanut butter

  • 1 tablespoon smooth apricot jam

Method: Sauté the garlic and onions in oil till transparent and soft. Add all other ingredients, and stir well, but do not bring to a boil. Serve with rice, vegetables, tofu, Indian bread or Damper.

SWEET AND SOUR SAUCE

Ingredients:

  • salt to taste

  • 2 cups vegetable stock

  • 3 tablespoons cornflour

  • 2 tablespoon golden syrup

  • 2 tablespoon pineapple juice

  • 3 tablespoons apple cider vinegar

Method: Mix cornflour with half a cup stock then put it aside. Heat the remaining stock, add the vinegar and pineapple juice. Before it boils and while stirring, add the cornflour mix, stir until it reaches boiling point. Turn the heat low, add the syrup and salt, simmer for five minutes.

Mustard Sauce

Ingredients:

  • 30g butter

  • salt to taste

  • vegetable water

  • 1 tablespoon cornflour

  • ½ cup brown vinegar

  • 1½ tablespoon honey

  • 1 tablespoon hot mustard

Method: Put all except the vegetable water in a saucepan over low heat and stir till smooth, then add enough vegetable water to make a sauce the consistency of warm honey. Serve with cauliflower, cabbage and potatoes. If left cold, Mustard Sauce is great as a salad dressing.

PAPRIKA SAUCE

Ingredients:

  • salt to taste

  • 1 tablespoon oil

  • ¾ cup tomato juice

  • 2½ tablespoons plain flour

  • 1 cup chopped brown onion

  • 1 tablespoon brown vinegar

  • 2 dessert spoons sweet paprika

Method: Fry the onion in oil till it browns, then stir in the flour and paprika, continue stirring for one minute; then gradually add the juice, the vinegar and the salt, simmer for five minutes.

PLUM SAUCE

Ingredients:

  • ½k treacle

  • 675g plum jam

  • ½ cup cornflour

  • 1 teaspoon salt

  • 2 cups brown vinegar

  • 1 dessert-spoon allspice

  • ½ teaspoon ground cloves

  • ½ teaspoon ground ginger

  • 1 teaspoon curry powder

  • 1 teaspoon powdered garlic

  • ¼ teaspoon cayenne pepper

  • 1 teaspoon ground cinnamon

  • 1 cup red wine

Method: Put all ingredients except the cornflour in a large saucepan (not aluminium). Bring it to a boil, reduce the heat and simmer for thirty minutes. Mix the cornflour with red wine, and slowly stir it into the sauce. Strain, bottle and seal.
