Frozen Pea Soup

Ingredients:

  • 1 kilo frozen baby peas

  • 2 cups vegetable stock

  • 3 cups Bonsoy (high-quality soy milk)

  • Pepper

  • Salt

  • 1 ½ tight handfuls of fresh mint leaves

Method: Simmer the peas in the vegetable stock till tender. Process the with plant milk and mint leaves, combine with the pea and vegetable stock. Heat but do not boil. Add pepper and salt to taste. Serve hot or cold.

Add Elegance. Make Croutons then scatter on top of the soup just before serving. It gives a crunch. To make the best croutons take stale slices of bread and remove the crusts. Then lavishly brush both sides with oil infused with herbs or garlic. Spread evenly on an oven tray and bake till golden.
