Marzipan Apple Cake Vegan
Ingredients:
1 1/2 cups margarine
1 cup light brown sugar plus extra 2 tablespoons
1 cup apple puree
3 cups plain flour
1 tablespoon baking powder
1 dessertspoon of white vinegar
about 4 cooking apples (number depends on size)
1 dessert spoon vanilla essence
2 tablespoons lime juice
400g marzipan (use pre-packaged)
Method:
Lightly oil and line with baking paper a 20cm square baking dish;
Pre-heat slow/moderate oven;
Process margarine and 1 cup sugar till light and fluffy;
While still processing add vanilla, vinegar and puree;
Separately combine baking powder with flour;
Add to margarine and sugar mix;
Divide mix in half, spoon 1 half into baking dish;
Peel, core and finely chop apples, dribble lime juice over apples;
Slice marzipan thinly, make a thick layer on top of apples;
Top with remaining batter;
Dampen hands and gently press the surface;
Sprinkle with the remaining 2 tablespoons of sugar.
Bake in centre of oven;
Apple Cake is cooked when the surface is crusty and rich golden;
Eat warm or cold.
