WHITE SAUCE
Ingredients:
salt and pepper to taste
2½ cups soy milk
white pepper
squeeze lemon juice
1½ tablespoons vegetable oil
2 level tablespoons plain flour
Method: Heat the oil, stir in the flour then remove the pan from the heat. Slowly stir in the milk, return the pan to low heat stirring until it just reaches boiling. Add the seasoning, and simmer for five minutes. Remove the pan from heat, add juice, stir well, then serve.
Variations: Replace wheat flour with 1 dessert-spoon cornflour. Replace soy milk with vegetable stock. Replace oil with margarine.
WINE SAUCE
Ingredients:
3 tablespoons plain flour
2 tablespoons oil
1 cup brown onions, chopped small
2 cups vegetable juice
2 tablespoons lemon juice
2 teaspoons red currant jelly
5 tablespoons red wine or Port
salt and pepper to taste
Method: Over low heat cook onions in oil till transparent over low heat, stir in flour and keep stirring till the flour has browned, but not burnt. Keeping heat very low, slowly stir in the vegetable juice. When smooth add the lemon juice and jelly, remove from the heat, add the wine or Port, Season with salt and pepper.
WORCESTERSHIRE SAUCE
Ingredients:
15g allspice
1 cup treacle
3 cloves garlic
5 large chillies
1 teaspoon salt
15g ground cloves
6 cups dark vinegar
1 cup dark plum jam
½ teaspoon cayenne pepper
Method: Put ingredients in a lidded pot, bring to a boil and simmer for an hour. Cool, strain, bottle and label.
TOMATO GRAVY
Ingredients:
salt to taste
30g plain flour
1 teaspoon sugar
½ teaspoon nutmeg
1 small brown onion
pinch ground cloves
½k very ripe tomatoes
2 cups vegetable stock
¼ teaspoon cayenne pepper
2 tablespoons Macadamia oil
Method: Peel and dice the onion, then cook in one tablespoon of oil till transparent. Add the chopped tomatoes and stock, bring the ingredients to a boil then simmer for twenty minutes. Remove the pan from the stove, cool a little then rub the contents through a sieve. Heat the remaining oil, stir in the flour, then slowly add it to the tomato mix. Stir till boiling, add sugar and salt, then simmer for five minutes.
TOMATO SAUCE
Ingredients:
¾k brown onions
1 tablespoon salt
2½ cups white vinegar
3k very ripe tomatoes
1 teaspoon each ground cloves, ginger & mace
Method: Pour boiling water over the tomatoes, leave till the skins start to break, then peel them. Peel and dice onions. Put tomatoes and onions in a saucepan with the spices and simmer till thick. When it loses its heat, rub the mix through a sieve, add salt, and vinegar. Return to low heat and simmer till thick. Bottle while hot lid and seal.
WATERCRESS SAUCE
Make one quantity of White Sauce, while hot and still in the saucepan, add three tablespoons of chopped watercress. Remove from the heat, leave for three minutes with the lid on the saucepan, then return it to low heat stirring continuously till almost boiling. Serve immediately with mashed potatoes, baked tomatoes, and bland root vegetables.
