Apple Soup

Ingredients:

  • 9 cups stock

  • 3 cups apple puree

  • 1 cup cooked white rice

  • sea salt and freshly ground black pepper to taste

  • 1 tablespoon powdered ginger

Method: Simmer stock over low heat, Stir in the apple puree and bring the pot almost to boil. Then add the rice then the ginger, pepper and salt. Simmer for five minutes. Serve hot with crumpets or Melba Toast.
