White Christmas Slice
White Christmas Slice is an age-old traditional goodie kept in the refrigerator during the Australian Christmas period. Children look forward to eating Christmas slices at home and when visiting. This is a recipe my grandmother made. Its appearance is magic. A snow-white body holding multi-coloured glace cherries.
White Christmas Slice
Ingredients:
500 g melted copha
2 cups sifted icing sugar
2 cups desiccated coconut
2 cups coconut milk powder
1 cup each red, yellow and green glace cherries
4 cups crushed breakfast cereal
Method:
Oil a square baking tin and line with greaseproof paper;
Halve cherries, mix other dry ingredients;
Add melted copha, mix well;
Transfer to the prepared tin, pressing down making sure mix feels solid;
Refrigerate overnight, cut into small squares when set;
Keep refrigerated, Christmas slice will keep for weeks.
