Fruit Cake Uncooked
Each portion of dried fruit is roughly equivalent to seven times the amount of fresh fruit and the fibre content is considered the same. Unlike bulky fresh fruit, dried fruit can be carried in a small bag in the pocket and can be nibbled whenever one feels the need for an energy boost. Dry fruits are easy to digest, have strong medicinal properties, are a super source of minerals, many essential nutrients and anti-oxidants. The proteins in dried fruit are essential against daily wear of the body. Raisins contain much iron so are beneficial to those suffering from anaemia, are rich in natural sugar and are an age-old treatment for constipation.
Vegan Fruit Cake Uncooked
Ingredients:
l cup whiskey or choice of alcohol/fruit juice
3 cups icing sugar
1/2 cup lemon juice
300 g each almond & hazelnut pieces
500g pitted prunes
125 g chopped dates
1 1/4 cup orange juice
9 cups crushed cereal
250 g dark chocolate
5o g mixed fruit
1 teaspoon ground cloves
1 teaspoon powdered ginger
1 cup dried apricots, chopped
4 tablespoons grated orange rind
2 dessert spoons grated lemon rind lemon
1 dessert spoon powdered cinnamon
Method:
In a lidded saucepan simmer prunes, orange and lemon juice, cook till tender, then puree
Combine all ingredients except chocolate, pack mix into a foil-lined cake tine, melt chocolate and drizzle on top
Refrigerate one (1) week before serving.
Note: Almonds, cashews, brazil nuts, walnuts, pecans, macadamia nuts, pistachios, pine nuts, and most other nuts are the seeds of drupes, so speaking nuts are classified as a kind of dry fruit with a single seed, a hard shell and a protective husk. Peanuts are legumes.
